A Little Something Sweet: SMALL BATCH - Chocolate Chip Cookie Bars

Small Batch Chocolate Chip Cookie Bars   (makes an 8x8 square pan or one round cake pan)   RECIPES AT THE TOP - CHIT CHAT AT THE BOTTOM! PRINTABLE VIEW HERE! 1 cup + 2 Tablespoons all purpose flour 1/2 teaspoon baking soda 1/2 teaspoon salt 1 stick (1/2 cup) real butter, softened 1/3 cup granulated sugar 1/3 cup packed brown sugar 1/2 teaspoon vanilla 1 egg 1 cup chocolate chips *This recipe could be doubled for baking in a 9x13 pan. (Makes about 12 cookie bars.) Instructions:   Preheat oven to 350°. Stir softened butter, both sugars, egg and vanilla until smooth.  Add baking soda, salt and stir.  Next add flour and stir.  Stir in chocolate chips last. Batter will be thick.  Spread in sprayed/prepared 8x8 square or 8" round cake pan.  (I actually sprayed my clean hands with cooking spray and then patted the dough into my sprayed cake pan.) Peanut Butter Brownies -  Pantry Cooking 1/2 cup peanut butter (I used creamy "naturals".) 1/3 cup margarine, softened (try not to melt all the way) 2/3 cup white granulated sugar 1/2 cup packed brown sugar 2 eggs 1/2 teaspoon vanilla 1 teaspoon baking POWDER 1/4 teaspoon salt 1 cup all purpose flour INSTRUCTIONS: Preheat the oven to 350 degrees. Do you like soft & chewy chocolate chip cookies?  I have found the recipe for you!  They happen to also be eggless and can be vegan if you want to use those options.  The key to the softness is the coconut oil.  Every time I use coconut oil in cookies, they turn out THE BEST! I've been really hating that so many bloggers bog my phone down with lots of chatter and ads before I can get to the recipe, so without much chatter, here's the recipe.  I will list a few tips for making cookies with coconut oil down below. We have a great little cookie bakery in the town where I work called "Hot Box Cookies".  The cookies are heavy, moist, and fantastic!  We only get Hot Box Cookies on super special occasions and one of the guys at work had a birthday complete with some Hot Box Cookies not too long ago.  One of my favorites is the Red Velvet White Chocolate Chip cookies that they have so I set out recently to come up with a recipe that I could make at home. Wouldn't you know it, I had everything I needed except butter.  Typical in my kitchen!  I did have some coconut oil which I sometimes use as a replacement for the fat in my recipes and/or in my soap making.  I decided to just use coconut oil instead of butter in my cookie recipe.  It was amazing!  I liked them so much that I decided to only make this recipe with coconut oil.  The cookies turned out nice and fat, crisp on the outside and chewy on the inside.  So good!  I am definitely going to...

Best Oatmeal Raisin Cookies EVER! Go-To Oatmeal Cookie Recipe!

Here's how I make the Best Oatmeal Raisin Cookies EVER - AT HOME MY WAY: Best Oatmeal Cookies EVER! 3/4 cup butter (use the real thing - I use salted butter), ( softened to room temp ) 1 cup dark brown sugar ( I didn't have brown sugar so used 1 cup regular sugar and added 1 teaspoon molasses to my creamed ingredients.  Light brown sugar works fine also.) 1/2 cup regular granulated white sugar 1 egg 1 teaspoon baking powder 1/2 teaspoon regular table salt 1 teaspoon vanilla 1/4 teaspoon baking soda 1/2 teaspoon cinnamon 1 3/4 cups all-purpose flour 2 cups oats (old fashioned oats-uncooked) 1 cup raisins (+water for cooking them) Directions (I use a wooden spoon to mix these up): FIRST - Preheat oven to 375° . No Bake Chocolate Peanut Butter Oatmeal Cookies

My mom used to make these cookies for my brother and I when we were growing up.  They continue to be our favorite cookie!  Typically she made them during the Christmas holidays but we love them any time.  They are great for summer treats because you don't have to use the oven.  They aren't super healthy, but with ingredients like oatmeal and peanut butter, I have determined (ha!) that they aren't such a bad choice.  Certainly they are a better choice than boxed cookies, right? I have made another recipe for these cookies.  Recipes for this cookie are all over the place.  The last recipe I made was a flop!  They didn't set up.  That was so disappointing!  I decided that, "Mama knows best" and dug out my mom's recipe for these cookies.  I followed her instructions to a T and they worked like a charm.  Definitely do it exactly like it says.  Who wants a flop recipe?  Not me!
