Ooey Gooey Cream Cheese Brownies - Homemade Brownies Marbled with Cream Cheese



Cream Cheese Brownies

The brownie recipe itself in Cream Cheese Brownies is a variation of my Homemade Brownie Mix recipe.  (The dry ingredients can be mixed and stored in baggies or jars in your pantry for mixing up a pan of brownies at a moment's notice and Ditching the Box.)  You can find other "Ditch the Box" recipes HERE.  

Brownie Ingredients:
  • 1 cup white granulated sugar
  • 1/2 cup all purpose flour
  • 1/3 cup cocoa powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/2 cup (1 stick real butter) (or oil works in a pinch)
  • 2 eggs (I use medium or small eggs for this)
  • 1 teaspoon vanilla

Cream Cheese mixture:
  • 8 oz block cream cheese
  • 1/2 cup white granulated sugar
  • 1 Tablespoon all purpose flour
  • 1 egg (using only the egg white will result in a whiter cream cheese mixture but I used the whole egg)
  • 1/2 teaspoon vanilla

Directions:
  1. Preheat oven to 350Ā°.
  2. Spray 8 x 8 square pan w/ cooking spray.
Mix up the brownies first:
  1. Melt butter (I used the microwave) in a mixing bowl.
  2. Add melted butter and sugar, stir well to combine until smooth.
  3. Add eggs and vanilla.  Stir again for smooth texture.
  4. Add cocoa powder, salt, baking powder, stir again.
  5. Add flour last and stir well to combine/smooth texture.
  6. Dump Brownie mix into prepared pan and spread evenly reserving about 1/3 cup.
Mix up the cream cheese mixture:
  1. Melt cream cheese and stir until smooth.
  2. Add sugar, egg, and vanilla and stir until smooth.
  3. Drop spoons of cream cheese mixture and the remaining brownie mix over the top.  
  4. Using a knife, swirl the cream cheese mixture into the brownie mix.  Less swirling makes the most contrast.
Bake:

Bake 32-35 minutes or until a knife comes out clean.  The edges of the cream cheese will be starting to brown a little bit.

I store my brownies (covered) in the fridge since cream cheese is used.  

THE CHIT CHAT

I asked Doug last weekend if he had any preferences for a dessert for the upcoming week.  (Sometimes a person just wants dessert and I prefer homemade treats so...often, on Sundays I make us a little treat.)

Doug must have reached way back in his memory because he asked for Cream Cheese Brownies.  This is not a recipe that I have ever made before.  Back in the day we use to have dinner with some very dear friends and the dessert was often Joy's infamous Cream Cheese Brownies.  Apparently they made such an impression on Doug that he remembered them nearly 20 years later.  We haven't had dinner with them in a very long time.  Definitely food takes you back and I certainly need to reach out to our friends to reconnect and to let Joy know that Doug is still loving her infamous Cream Cheese Brownies.

I used my own homemade brownie mix to make the base for this recipe and then just searched other Cream Cheese Brownie recipes to find the combo for the cream cheese swirl to make them At Home May Way.  

These brownies turned out completely delicious!  They are ooey and gooey.  They are definitely reminiscent of cheesecake.  Mmmmm.  Soo good! I had everything I needed to make them already in my pantry and fridge. PLUS, I was looking for something I could make with only 1/2 cup of flour (since that's all I had) so it was a win/win with this recipe since my homemade brownie mix only requires 1/2 cup of flour.

This recipe makes a small 8 x 8 pan of brownies so if you are making these for potluck, you will want to make sure to double the recipe and use a 9 x 13 pan.  Also, let them cool entirely before cutting.  They make mighty pretty servings and I'm sure they would be gobbled up at your next family dinner or office potluck.

Best Dill Pickles EVER! (Just like Claussen) (Easy - no canning!)

Do you want to make the best, easiest homemade dill pickles in the world?   I found a recipe for dill pickles that tastes JUST LIKE Claussen refrigerator pickles.  Those are the best anyway, right?  That crunch, the dill and the garlic... and oh yea , the crunch!  This recipe is super easy because you  don't have to process these pickles which means there is no canning needed.   You just fill a gallon jar (we use an old pickle jar) with fresh cucumbers and dill heads, and then pour over the cooled liquids/seasonings.   Let it sit on the counter for three days, and then refrigerate.  After that, the pickle eating begins.
