Homemade Pizza Pockets

Tonight is homemade pizza night at our house.  I normally like to have some pizza dough in the refrigerator for Friday nights and Saturday lunches.  I know that one of those meals will definitely be pizza.  The most affordable way to eat pizza is AT HOME MY WAY!  The recipe for the dough for making pizza and Homemade Pizza Pockets is "here" and "here" .  (Remember that you can make lots of things using this dough, like Homemade English Muffins , a pizza bread , or even just some simple crusty bread to go with soup.) Sometimes, by the end of the weekend, we've eaten all the pizza we want and there's just a little dabble of dough left, like this: What to do with such a small amount of dough?  Make Homemade Pizza Pockets for the freezer, of course!  You can tailor them to have just the fillings you prefer and later in the week, you will be so glad you have some homemade goodness in your freezer for lunches on the run!    I'...

Cinnamon Oatmeal Waffles

I just started making homemade mixes in my kitchen not too long ago.  I hadn't really seen the need to mix stuff up when I had the recipe and the stuff in my kitchen UNTIL one day I was making some Perfect Pancakes and ran out of eggs.  Hmm... here I was with all the dry ingredients and no eggs.  I decided to plop my ingredients in a jar to use later.  Then, fast forward to a day that I wanted to make some pancakes and "BAM" (as quoted by two of my favorite hollywood personalities, Sheldon from Big Bang Thoeory and Emeril Lagasse from the Food Network...), I had pancakes!  I had forgotten how easy having a mix was for getting stuff on the table fast.  I don't usually make a big deal out of making a mix.  I just have a few canning jars out and as I'm making pancakes I add the dry ingredients to the jars for extra batches.  It's that simple. The recipe for the Cinnamon Oatmeal Waffles is an actual mix that you mix up a big batch of and th...

Reusing Spaghetti Sauce from the Freezer - Seashells or Lasagna

One of my favorite things to have on hand is spaghetti sauce.  I make a big pot of it often and then eat leftovers until I can't stand them anymore.  When there is still spaghetti sauce left, I freeze it.  It's delicious, homemade, and can be turned into a variety of different meals.  I realize that to most people spaghetti served with other pastas is still just spaghetti.  Honestly, though, to me, different pastas make a world of difference.  Spaghetti has different  "meal feel" to it than say... Seashells... or Lasagna. Last night, it was the first day back to work after the break for New Year's.  I was tired.  Definitely I wasn't stopping at the grocery store at 6PM.  Luckily, I had some handy dandy spaghetti sauce in the freezer.  First, I will give you my spaghetti sauce recipe.  Honestly, I just dump and shake because I've made this so many times.  But I have written the recipe down for my daughters becaus...
