Small Batch Old Fashioned Vanilla Cupcakes (Makes 12) Cupcakes : 1 1/4 cups all-purpose flour (I use unbleached.) 1 1/4 teaspoons baking powder 1/2 teaspoon salt 1/2 cup (1 stick) melted butter 3/4 cup sugar 2 large eggs 2 teaspoons vanilla extract 1/2 cup buttermilk (I used 1/2 cup milk + 1 teaspoon lemon juice-that rested a few minutes - or just milk will work fine.)
