Pantry Cooking - Homemade Yellow Cake

I want to post this delicious little (snack size) Homemade Yellow Cake recipe.  This cake is really good!  Sometimes its hard to find a scratch yellow cake that tastes as good as a box cake.  But, with this recipe, who needs a box??  Not me!  I think this one is better!  It has that yummy aroma and taste of a grandma cake! Last night I needed a little something sweet.  I didn't have any special ingredients on hand, just typical pantry stuff.  I decided to top this cake with a cinnamon crumb topping.  It turned out wonderful!  Even my husband loved it.  He's not much of a sweet eater, but he's been slicing off slivers since it came out of the oven.  This would work well for an afternoon snack or even a coffee cake to serve to friends or family.     You could also make the cake as cupcakes (it would only make 12 cupcakes) and/or frost with your favorite frosting (and not use the crumb topping)!  My favorite ...

Cinnamon Oatmeal Waffles

I just started making homemade mixes in my kitchen not too long ago.  I hadn't really seen the need to mix stuff up when I had the recipe and the stuff in my kitchen UNTIL one day I was making some Perfect Pancakes and ran out of eggs.  Hmm... here I was with all the dry ingredients and no eggs.  I decided to plop my ingredients in a jar to use later.  Then, fast forward to a day that I wanted to make some pancakes and "BAM" (as quoted by two of my favorite hollywood personalities, Sheldon from Big Bang Thoeory and Emeril Lagasse from the Food Network...), I had pancakes!  I had forgotten how easy having a mix was for getting stuff on the table fast.  I don't usually make a big deal out of making a mix.  I just have a few canning jars out and as I'm making pancakes I add the dry ingredients to the jars for extra batches.  It's that simple. Perfect Pancakes -Sunday cooking

Sunday mornings usually start with something special for breakfast at our house.  It was cool and crisp Sunday morning and I managed to drag myself out of bed BEFORE my husband so I actually had the kitchen to myself ha-ha.  I started some bacon knowing that would probably bring him stumbling into the kitchen pretty quickly. I also discovered I didn't have any flour, so that meant no biscuits, pancakes, muffins...  Hmmm... we couldn't have just bacon and bread...  no way!  BUT then..... I remembered that I had made some homemade pancake mix the last time I made pancakes. Boing!  Boy, was I glad I did that!  (I had just mixed up the dry ingredients and added them to a canning jar. I wrote the additional wet ingredients I needed for the recipe on a piece of paper and stuck it with some tape on the jar.)  Hurray, we were having pancakes after all!  Making homemade pancake mix saved lots of steps....
