Crockpot Pineapple Pork Loin - Easy and So Delicious!

   RECIPE AT THE TOP! CHIT-CHAT AT THE BOTTOM! Crockpot Pineapple Pork Loin 2- 3 lb pork loin (not the same as pork roast or pork tenderloin) 2 Tablespoons oil  salt & pepper 2 teaspoons garlic powder 1/4 cup soy sauce 1/2 cup brown sugar  23.5 oz can chunk pineapple (not drained) INSTRUCTIONS: TRIM:  Trim the fat off as best you can from the pork loin BROWN:  Brown the meat on all sides in a skillet before adding to the crockpot.  (Not absolutely required but makes makes a richer flavor. ADD:  Add pork loin to the crockpot. SPRINKLE:  Sprinkle with garlic powder and salt/pepper. TOP:  Top with pineapple, the juice, and soy sauce. SPREAD:  Spread brown sugar evenly over the pork loin. COOK:  Cook on low 6-8 hours OR on high 4-5 hours until fork tender. OPTIONAL:  You could thicken the juice (before serving) with a mixture of a little flour blended into cold water and stirred in, then heated to thicken (like for gravy)....

Sunday cooking for the week - May 31, 2015

I was bound and determined this weekend to prepare a few lunch and breakfast items for the week ahead.  This would hopefully make packing lunches and grabbing breakfasts easier as well as helping me save a little moolah. We have had some seriously cool and rainy weather for the last week or so here in mid Missouri.  Personally, I am ready for warm/hot - summer weather, but it appears I'll be waiting a little longer..... Rainy/cool weather does make for good cooking weather.  I spent the cool, dreary day doing something I enjoy.  Cooking!  I started the day making breakfast.  My husband loves this combination: Bread Machine Bagels Bakin' Bacon   (I didn't make the biscuits-we had bagels.) Later in the day, I decided to make a batch of these homemade pigs in a blanket to stick in the freezer for fast and easy lunch packing.  These are so easy to make since the dough is made in the bread machine.  I figure one batch of br...

Sunday Cooking and Weekend Gardening

We had a beautiful weekend here in mid Missouri!  Our pool water is a little cool from nights in the 60's and days only up in the 80's but that does make some beautiful weather for porch sitting, visiting with friends, working in the garden, and getting a little cooking done for the week. My garden is looking great.  I have noticed a little munching damage.  I'm not sure exactly what to do.  I know I need some sort of fence but since I'm not sure if the problem is deer or rabbits, for now I just stuck my husband's radio, blasting country music out there.  We'll see if that takes care of it. My squash are looking nice!  Hopefully this year we will get at least one precious squash from my garden.  Definitely I think some of the new things I tried are working.  I was out in my garden early Friday morning and saw some honeybees hard at work pollinating the squash!  Hurray for the girls! Sunday Cooking

I spent yesterday cooking lots of recipes that I already have posted.  But they bear repeating because they are delicious.  I like to have some homemade bread for my sandwiches (I say MY because my husband prefers the store bread that is as soft as cake (ick) and I wanted something a little more toothy for my garden tomato sandwiches ha!) so I made a wheat/molasses version of my Homemade Sandwich Bread .  (I used 2 cups all-purpose non-bleached white flour with 1 cup of whole wheat flour and substituted molasses for the sugar in the loaf I made.  This picture is not the loaf I made yesterday.) We were barbequing one piece of steak and a few chicken tenders I found in my freezer for supper so I also made a loaf of Crusty French Bread .  It turns out just perfect!  I'm thinking I might put a few loaves of this in my freezer for using to make garlic bread (instead of buying those premade loaves of french bread at the grocery store).
