Sunday Funday: 2026 Garden Update and Cooking like a Granny!

FIRST:  Three recipes -  Cooking Like a Granny! #1 Fresh Peach Pie  (home frozen peaches) Two fresh pie crusts-unbaked Filling : 1 gallon baggie (6 cups) of frozen fresh peaches/juice drained a little, thawed completely 2/3 cup of sugar  4 heaping Tablespoons of flour  1/2 teaspoon of cinnamon  2 Tablespoons butter sliced into small pats Instructions: Roll one crust and gently place in the pie pan making sure the edges extend over the sides of the pan a little bit.   Mix up the filling and  pour into the crust.   Roll remaining crust (top) and cut into lattice strips about one inch wide or so.   Add strips across the pie.   Fold back the top half every other strip and add a cross strip starting in the middle with the longest strip.  Unfold those strips over and fold back the  remaining "every other" strips.  Add another cross strip. Leftover Cranberry Sauce - Two Ways!

 Recipes at the Top!  Chat-chat at the bottom! #1 Surprise Muffins (Cranberry Sauce) 2 cups all purpose flour 1/3 cup sugar 3 teaspoons baking POWDER 1 teaspoon salt 3/4 cup milk 1 egg 1/2 cup oil (I used vegetable oil) Leftover cranberry sauce (about 1 cup) Colored sugar/sprinkles if you have some 12 cupcake papers or spray the pan well. Instructions: PREHEAT OVEN to 350 degrees and place liners in muffin tin (12) COMBINE:  In a mixing bowl, combine all dry ingredients. COMBINE SEPARATELY:  In a separate dish, add milk, oil and egg.  Blend well. COMBINE:  Wet and dry ingredients and stir well to make a thick batter. MUFFIN TIN:  Spoon one scoop (like 1 heaping Tablespoon) of batter in each cup of a 12-muffin tin.  Spread it around a little to cover the bottom of the cup. ADD CRANBERRY SAUCE:  On top of the batter in each cup, add a Tablespoon of cranberry sauce to each cup. TOP:  Top with another scoop of batter. SPRINKLE:  If you ...

Surprise Muffins - Another Pantry Friendly Recipe!

Surprise Muffins   (Easy - Uses Pantry Ingredients) 2 cups all purpose flour 1/3 cup sugar 3 teaspoons baking powder 1 teaspoon salt 3/4 cup milk 1 egg 1/2 cup vegetable oil *Jam/jelly of your choice (optional) *Colored sugars for sprinkling (optional) Directions: PREHEAT:  Oven to 350 degrees COMBINE:  In a mixing bowl all of the dry ingredients. Stir well. COMBINE:  In a separate dish from the dry ingredients- the egg, oil, and milk.  Stir so egg is thoroughly blended with other wet ingredients. COMBINE: Wet and dry ingredients  and STIR, just until blended . PLACE: Muffin papers in 12 muffin cups/tin.  (I really prefer papers for these muffins.) SCOOP:  Approximately one heaping Tablespoon of batter into the bottom of each muffin cup. NEXT PLACE:  About 1 teaspoon of your favorite jam or jelly on top of that batter. Super Easy - Crockpot Granola - Uses Less Dishes Than Traditional Granola

Banana Oatmeal Muffins - No Eggs- Frugal City!

I made these Oatmeal Banana Muffins for my breakfasts this week using some overripe bananas that were on their last leg.  I created this recipe using my No Eggs Pumpkin Bread recipe as a guide.   I wasn't sure how the recipe would turn out but I don't always have eggs so I wanted a recipefor muffins that didn't use eggs. Woo hoo!  These are great!  Perfectly moist like banana bread.  Yummy and fantastic! This recipe uses only a few ingredients; has a minimal amount of sugar in it, has oats in it, and no eggs.  How can that be a bad thing, right? Pumpkin Bread - NO EGGS - Delicious, frugal, & VEGAN!

Need a yummy sweet bread (or muffin) to go with your morning coffee, but don't have any eggs?  I have a good one for you today! Last night I tried a recipe for an eggless pumpkin bread that was a complete SUCCESS! My niece makes mostly vegan or vegetarian dishes and I have enjoyed learning from her and making some really good food that doesn't use any animal products.  Am I a vegan?  No.  But, I have discovered that vegan dishes don't make me feel so stuffed and sluggish -and they are usually less expensive  to make!  I also love having a few vegan recipes up my sleeve for when I run out of eggs or need a meal and don't have any meat. This recipe for pumpkin bread turned out fantastic! Seems like pumpkin recipes always have increased amounts of eggs so I wasn't sure how this would turn out since it has no eggs??  But - it's perfect!   The texture is light; the crumb is fine.  It's really amazing!  I am only using this recipe...
