Pumpkin Bread - NO EGGS - Delicious, frugal, & VEGAN!

Need a yummy sweet bread (or muffin) to go with your morning coffee, but don't have any eggs?  I have a good one for you today! Last night I tried a recipe for an eggless pumpkin bread that was a complete SUCCESS! My niece makes mostly vegan or vegetarian dishes and I have enjoyed learning from her and making some really good food that doesn't use any animal products.  Am I a vegan?  No.  But, I have discovered that vegan dishes don't make me feel so stuffed and sluggish -and they are usually less expensive  to make!  I also love having a few vegan recipes up my sleeve for when I run out of eggs or need a meal and don't have any meat. This recipe for pumpkin bread turned out fantastic! Seems like pumpkin recipes always have increased amounts of eggs so I wasn't sure how this would turn out since it has no eggs??  But - it's perfect!   The texture is light; the crumb is fine.  It's really amazing!  I am only using this recipe...

Pumpkin Chocolate Chip - Oat Muffins

Breakfast-breakfast; what to have for breakfast?   This morning as I lay in bed, my tummy was already growling - hungry before I even stepped a foot out of bed.  Not a good sign LOL. My best plan of action is always muffins.  They mix up fast and I like them well enough that I don't miss the super size chocolate frosted and vanilla cream filled long john donut that I'm really craving (shhh...)! Back to the muffins... I LOVE pumpkin everything.  I especially love pumpkin chocolate chip muffins and bread.  I tweaked my normal pumpkin chocolate chip muffin this morning and liked it so much that I wanted to share it with you.  I subbed out 1/2 cup of the flour in the recipe for oats  so that I would get a heartier muffin.  I prefer muffins that taste like a muffin and not like a cupcake, ya know??  These muffins have the perfect texture now.  Perfect! It's Pumpkin Time! Pumpkin Waffle Time

RECIPES AT THE TOP - CHIT CHAT AT THE BOTTOM! Pumpkin Waffles ( Printable Recipe Here ) 2 Large eggs 2/3 cup buttermilk (I used 1 Tablespoon lemon juice in my measuring cup, and added milk to equal 2/3 cup.) 1 Tablespoon molasses (pancake syrup would be fine) 1/3 cup canned pumpkin puree 3 Tablespoons oil 1/4 teaspoon nutmeg 1/4 teaspoon ground cloves 1 1/2 teaspoon ground cinnamon 1 teaspoon baking SODA 1/4 teaspoon salt 1 cup flour Cooking spray for the waffle iron Instructions : I used a large measuring cup (6 cups) so that I could pour my waffle batter, but a mixing bowl will be fine. Beat the eggs well.  Add buttermilk (I used the above combination of lemon juice + regular milk), oil, pumpkin, molasses, salt, baking soda, cinnamon, cloves, and nutmeg.  Stir well until all combined.  Add the flour last.  Stir until smooth. Pumpkin Pie with an Homemade Crust (made with Oil)

The first day of my "pity party" (when my youngest moved to college), I was in a quandry (gotta love that word LOL) as to what to cook.  My daughter was an adventurous eater like I am and if I couldn't make homemade stirfry , kinda empanadas , or frosted sugar cookie bars , I didn't know what to make!  I boo-hooed meditated in my bedroom until I could get myself together and then decided to cook for my man!  I put some boneless, skinless chicken breasts in a skillet with a tiny bit of oil and browned them, then added some of our favorite BBQ sauce and cooked them with a lid until they were juicy and saucy!  I also made a recipe I had been wanting to try for Easy Macaroni and Cheese, which did not turn out like I hoped, so I'm going to keep working on that recipe to make it a little better before posting.  But the BEST thing I made for him was a Homemade Pumpkin Pie.  It was delicious!  My hubby has RAVED about the pie I made.  Several tim...
