How about if you can keep them in the freezer ready at a moment’s notice?  Here’s how I stock our freezer with Freezer Subs AT HOME MY WAY! Freezer Subs / Making Pizza Subs ( PRINTABLE RECIPE IS HERE ) Ingredients: French Bread Loaves (I get the skinny ones at Walmart.) Lunch meats of your choice (I used Frickes sliced ham found near the big hams in Walmart) Pepperoni (Pepperoni adds a nice spiciness to homemade subs!) Cheese (grated or sliced) Butter/margarine, softened (about a half stick per large bread loaf) OR olive oil works fine here Garlic Powder Sauces (optional) – pizza sauce, ranch dressing, BBQ sauce, buffalo sauce, etc. Foil (I prefer heavy duty foil.) Here's how I make Southern Buttered Cheese Grits AT HOME MY WAY: Southern Buttered Cheese Grits 2 cups water 1 cup milk 3/4 cup  Quick  Grits (I used Quaker brand) 1/4 teaspoon salt (or a tad more than that) 2 Tablespoons butter/margarine 1/2 to 3/4 cup of grated SHARP cheddar Instructions: Combine the milk, water and salt in a saucepan and bring to a boil.  Be careful!  Remember, that milk will scorch so stir often and don't cook on complete high. Add grits and stir.  Stir occasionally until back to boiling.  Cover.  Time and cook for 5 minutes while covered, stirring often - lowering the temperature almost off so that they don't boil over or scorch.   After cooking 5 minutes, covered, remove from the hot burner.  T...

Buttermilk Biscuits - Just like Cracker Barrel!

RECIPES AT THE TOP - CHIT CHAT AT THE BOTTOM! Here's how we make Buttermilk Biscuits AT HOME MY WAY: Buttermilk Biscuits (just like Cracker Barrel) (Makes about 8 biscuits.) PRINTABLE RECIPE HERE Ingredients: 2 cups SELF RISING flour  (self rising flour gives the perfect taste to homemade biscuits) 1/3 cup shortening  (cold real butter also works here) 1 1/4 cup buttermilk*  *NOTE:  (If using regular milk combined with lemon juice vinegar referenced below, you only need 1 cup of milk because thinner regular milk uses less by volume than the thick real buttermilk.) Directions: Preheat oven to 400 degrees. (Make sure your flour is "fluffed" not straight from the bag;  Dump it in a larger container and stir using up and down motion to fluff it up a little bit-THEN measure out 2 cups).  Measure 2 cups SELF RISING flour into a mixing bowl.  Add shortening and cut it until small and crumbly. Homemade Egg Rolls

I have been on a serious Chinese buffet "roll" lately!  My favorite hometown restaurant is called "Happy China" and the staff at Happy China and I are now on a first name basis LOL.  The food is consistently delicious and I can get a buffet one-trip to go, which makes me one happy girl!  However, this isn't such a good thing on the old budget.  I find that my Happy China buffets are adding up and I need to find something just as good that I can eat at home and leave eating Happy China as an occasional treat. I decided this weekend to make my hubby one of his favorite meals ever, Hawaiian Chicken .  Hawaiian Chicken is one of those things that I like to eat, but I never think to make it.  I decided this was pretty close to the chicken I get at my favorite Happy China restaurant.  I decided to make Homemade Egg Rolls to go with our meal.  I figured the crispy egg roll wrapper would fill my need for dipping yumminess (I love to dip in...

This morning I planned to make homemade pizza for supper.  Well... let me back up.  Last night my husband wanted to order out pizza for supper.  We had some errands to do and just ended up eating leftovers when we got home so I decide this morning to quickly make some pizza crust so that I could make homemade pizza for tonight's supper and avoid that whole $12 pizza thing. I made a half batch of 5 Minute A Day Dough in about 30 seconds flat this morning, stuck it in the fridge, and called her GOOD!  It's that easy and makes two pizzas for this half batch of dough. Chicken & Dumplings (as good as from Cracker Barrell)

Homemade Chicken & Dumplings As strange as it may seem, one of the first comfort meals I learned to cook was Homemade Chicken & Dumplings. (Although this is not how my mom makes chicken & dumplings.  Hers are dropped and are fluffy like a biscuit.)   As a young married couple we spent lots of time with another young couple.  We laughed, cruised many a country road, and had little structure to our lives (those were the days LOL).  A few times we ate dinner with them and one of my friend's specialties was this recipe for Chicken & Dumplings.  My very picky husband must have felt pressure to be nice and taste her dish (he would never have tasted it for me), but he instantly fell in love this creamy comfort dish.  Since learning to make this I have enjoyed many a plate of chicken & dumplings at Cracker Barrel restaurant knowing the entire time that mine is every bit as good as what you get in this restaurant.
