A Little Something Sweet: SMALL BATCH - Chocolate Chip Cookie Bars



Small Batch Chocolate Chip Cookie Bars 

(makes an 8x8 square pan or one round cake pan)

1 cup + 2 Tablespoons all purpose flour

1/2 teaspoon baking soda

1/2 teaspoon salt

1 stick (1/2 cup) real butter, softened

1/3 cup granulated sugar

1/3 cup packed brown sugar

1/2 teaspoon vanilla

1 egg

1 cup chocolate chips

*This recipe could be doubled for baking in a 9x13 pan.

(Makes about 12 cookie bars.)

Instructions:  

Preheat oven to 350°.

Stir softened butter, both sugars, egg and vanilla until smooth.  Add baking soda, salt and stir.  Next add flour and stir.  Stir in chocolate chips last.

Batter will be thick.  Spread in sprayed/prepared 8x8 square or 8" round cake pan.  (I actually sprayed my clean hands with cooking spray and then patted the dough into my sprayed cake pan.)

Bake 22-24 minutes or until browning.

Wait to cut until cooled a little.


The Chit Chat


This weekend we put burgers on the grill.  I typically make "a little something sweet" when we grill  out and often that is simple (ditch the box) brownies or no bake cheesecake.  This weekend, I already had butter on the counter at room temp to mix up some chocolate chip cookies when I decided scooping out cookies somehow seemed like too much work.  

I found a nice chocolate chip cookie bar recipe and then halved it for this one small batch of chocolate chip cookie bars.  (It made about 12 cookie bars.)  Doug and I definitely don't need a full 9 x 13 pan of anything anymore so mixing up a one-bowl small batch of cookie bars was perfect for a quick dessert made after a full day of yardwork, housework and laundry!

These cookie bars turned out so delicious!  Warm from the oven, they would be extra special with a scoop of vanilla ice cream. For us, they were simply delicious, warm and chocolately after we had both settled into our respective TV spots that evening.  

SMALL BATCH BAKING IDEA:  Small Batch Chocolate Chip Cookie Bars would make a great meal prep item for packing lunches and even for delivering to a friend who needs a treat.   

HINT:  You can double the recipe and bake in a 9x13 pan if you need a bigger batch!

SWITCH THE CHIPS:  Chocolate Chip cookie bars could be made with vanilla chips, peanut butter chips, with or without nuts.  

THIS RECIPE IS A KEEPER:  They are like chocolate chip cookie's dreamy cousin.  They remain soft for days (if they last that long).

Easy Peasy Parmesan Chicken in the Crockpot (Only 5 ingredients!)

RECIPES AT THE TOP - CHIT CHAT AT THE BOTTOM! Here's how we make Buttermilk Biscuits AT HOME MY WAY: Buttermilk Biscuits (just like Cracker Barrel) (Makes about 8 biscuits.) PRINTABLE RECIPE HERE Ingredients: 2 cups SELF RISING flour  (self rising flour gives the perfect taste to homemade biscuits) 1/3 cup shortening  (cold real butter also works here) 1 1/4 cup buttermilk*  *NOTE:  (If using regular milk combined with lemon juice vinegar referenced below, you only need 1 cup of milk because thinner regular milk uses less by volume than the thick real buttermilk.) Directions: Preheat oven to 400 degrees.
