GARDEN TO TABLE: Summer Squash & Cheese Patties (Baked)

Garden fresh yellow squash became the very best baked Squash & Cheese Patties AT HOME MY WAY!

Summer Squash & Cheese Patties (Baked)

  • 4 cups of grated yellow squash-washed & unpeeled

  • 1 egg

  • 2 T. milk 

  • 1 teaspoon onion powder

  • ½ teaspoon garlic powder

  • 1 teaspoon paprika

  • 1/2 teaspoon salt

  • 1 cup grated cheese (I used mozzarella.)

  • 1/2 cup grated parmesan (I used the real stuff but canned is fine.)

  • 1/2 cup flour (GF is fine)

  • 1/2 cup seasoned bread crumbs (GF is fine) (or just use all bread crumbs)

  • Cookie spray or parchment for the baking pan

INSTRUCTIONS:

PREHEAT OVEN TO 350 degrees.

  1. Wash and grate yellow squash with the peeling on.  (If super juicy, squeeze out all of the moisture.  Mine was not and I didn’t do this step at all.)  Measure into a bowl.  (I wasn't real exact.  I just grated one medium yellow squash into my bowl.)

  2. Add remaining ingredients (except of course, the cooking spray).

  3. Stir well to fully combine.

  4. Scoop patties into a sprayed cookie sheet not touching each other.  (I used an ice cream scoop.)  Pat them a little bit and form them into patty shapes.

  5. Bake 25-30 minutes or until crispy and golden brown.  You can flip them halfway to toast both sides if you want.  I didn’t.  Mine got crispy without turning.

I served with ranch dressing but they really didn’t need a single thing!

 


THE CHIT CHAT

 

My garden has been giving up lots of yummy goodness lately - one of which has been straight neck yellow squash.  Oh yellow squash, how I love you so!  😍 Yellow squash and tomatoes are the main reasons that I even PLANT a garden!  

 

I grew up eating yellow squash all summer.  My mom makes it as Stewed Squash or she slices, breads and fries it.  When I was a kid, I LOVED Stewed Squash.  I did not love fried squash.  (Shh… but I hated it!) (However, I’m going to try it again because it smells oh so good and being in the kitchen with summer squash frying on the stove will take me all the way to central Florida to my mom’s kitchen!)

 

My inspiration came from a new SUPER FAVORITE YouTube video channel, “Hey Wanderer”.  BFF’s Casey and Savannah are two sweet girls out there in Tennessee making their home in a tiny house/shed, building everything themselves, growing things, cooking as much from scratch as they can, loving on their animals AND sewing.  They even have a Sew Shack!  Gah - Everything I love and hope to be when I grow up!  (Oh yea… I’m turning 60 this year.)  I can relate so well to them since Doug and I lived in our own tiny house (“The Love Shack”) for five years after our house burned.  It was an amazing experience and watching Casey and Savannah brings me lots of joy!

In one of the “Hey Wanderer” videos, Savannah used some of their own summer squash to make baked squash & cheese patties.  I have had mashed potato cakes and have heard of fried zucchini patties, but hadn’t ever really heard of making them with yellow squash, putting cheese in them, or baking them.  They sounded yummy and I had to try them!

 

These patties are DELICIOUS!  They are simple, and pretty hands off since they bake in the oven.  I served my squash patties with a little ranch dressing but they are so delicious, you really don’t need a dipping sauce.  I think that adding some Old Bay seasoning could turn them into mock crab cakes (which I will be trying). Also, I think placing a big squash patty on a bun with some summer tomato slices might make a mighty fine sandwich.  These squash patties are what garden to table dreams are made of!

Easy Peasy Parmesan Chicken in the Crockpot (Only 5 ingredients!)

RECIPES AT THE TOP - CHIT CHAT AT THE BOTTOM! Here's how we make Buttermilk Biscuits AT HOME MY WAY: Buttermilk Biscuits (just like Cracker Barrel) (Makes about 8 biscuits.) PRINTABLE RECIPE HERE Ingredients: 2 cups SELF RISING flour  (self rising flour gives the perfect taste to homemade biscuits) 1/3 cup shortening  (cold real butter also works here) 1 1/4 cup buttermilk*  *NOTE:  (If using regular milk combined with lemon juice vinegar referenced below, you only need 1 cup of milk because thinner regular milk uses less by volume than the thick real buttermilk.) Directions: Preheat oven to 400 degrees.
