RECIPES AT THE TOP; CHITCHAT AT THE BOTTOM!

Crockpot Steak Dinner (So good!)

PRINTABLE VIEW HERE

  • Sirloin Steaks (2-4) cut in large chunks like you would put on a skewer/kabob
  • 4-6 potatoes (red skins work great but I had russet) washed, peelings on and cut into big cubes.
  • OPTIONAL:  Fresh or canned mushrooms would be delicious added to the pot.)
  • 1 cup beef broth (I used water + beef bullion)
  • 1 Tablespoon garlic powder or minced / fresh garlic
  • 2 Tablespoons worcestershire sauce
  • Drizzle of oil (i used olive oil.)
  • 1/2 stick of butter
  • Salt & Pepper
  • Crockpot (I used a tall, round crockpot so that there wasn't much empty space around the food.)

Instructions:
  1. Rinse the meat and cut into large chunks.
  2. Wash potatoes and cut into chunks about the same size as your meat (big enough that you could skewer them if you were doing that.  Like 2 inch cubes.  (I left the peelings on.)
  3. Drizzle oil in the bottom of your crockpot.
  4. Place the potatoes in the crockpot and sprinkle w/ salt/pepper.
  5. Top with the meat chunks.  Add a little salt & pepper.
  6. Measure the broth and add the garlic and worcestershire sauce.  Stir.
  7. Pour the broth mixture over the meat/potatoes in the crockpot.
  8. Slice butter pats and place around on top of the meat/potatoes.
  9. Cover and cook on high about four hours or on low about 6 hours total.  After two hours, I drained most of the broth off (I just cracked the lid and poured it in the sink) because I wanted my meat to "roast" and not to just boil in broth.  Then, I added the lid and continued to cook for the remaining two hours.
  10. At the end of your cooking time check and see if the meat is fork tender.  If so - set the table.  It's time to eat!

THE CHIT CHAT

The other day I ran across one of those random recipes that pop up on Facebook.  It was for a steak dinner in the crockpot.  The post wasn't big and colorful.  It was just a recipe and the lady said it was amazing.  I snapped a screenshot of it with my phone.  Who ever heard of such a thing?

Well, I love me a good steak dinner with delicious steak and yummy baked potatoes.  I personally love a pink/medium cooked steak but I could live with a "well done" steak if it was tender and tasted like a good steak.  I knew that steak cooked in a crockpot couldn't come out pink but if it was described as "amazing", I wanted to try it.

Back story is that we can never make steak at home taste good at our house.  I have bought cheap steaks and more expensive steaks but all of them just aren't as good as I can get at a steakhouse.  (Texas Roadhouse isn't too expensive and their steaks are delicious but their new policy of me waiting for my table in a cattle shoot after waiting with a beeper is a no-go and I will never go there again until they change that process lol.)But even steak in a restaurant sometimes seems to be a guessing game, ya know?

Plus + I am a big fan of ye old crockpot.  Sundays are supposed to be a day of rest but that never seems to happen for me.  About the only day that I have available to get a big meal on the table is Sunday but coupled with the remaining laundry, mowing, meal prep for the week, and visiting on our schedule, time in the kitchen is limited these days.  I decided that if something as crazy as a steak dinner can be made in the crockpot, I wanted to give it a try.  Worst case scenario was that it would taste like the overdone steaks we usually end up with on the grill and those still make a darn good meal.

Well, I'm here to tell ya - these steaks were the BOMB DIGGETY!  No, they were not pink and cooked to medium sizzling perfection.  But they were fork tender (wow!) and flavorful and the potatoes were also cooked perfectly.  No the potatoes were not salted, shiny and had no crispy edges but they were delicious and so far they are the only way my husband eats a baked potato with the skins on.  That in and of itself is a win!  :)

Not having to baby the meal and stand in the kitchen or at the grill cooking was a double plus ++!  Getting the whole thing in the crockpot only took about 15 minutes.  Just WOW!

Doug loves garlic bread about as much as he loves me so I served our steak dinner with some garlic bread (made with our very own Homemade Garlic Powder), a few ears of overpriced (but delicious) sweetcorn that I found at Walmart, and a nice salad.  I even made a small batch of Simple Homemade Ice Cream for dessert. (The recipes are linked on the items.)  It was a feast!

The garlic bread is made by thick slicing a french bread  loaf, spreading each slice with softened butter or brushing with olive oil and sprinkling each slice with garlic powder.  I wrap the whole loaf in a big piece of tin foil and bake the loaf in the oven at 350 degrees for about 15 minutes.

The corn is also super easy.  I cut off the stalk ends and microwave the corn (still in the husks) for about 10 minutes.  After it comes out, I use a pot holder to squeeze the corn out of the husk. Squeeze pretty hard hard from the silks end of the corn and the cob of corn will come shooting out of the husk easy peasy.  If it doesn't come out easy, then cook it some more.  You will have no silks, and no mess.  It's the very best way to make sweet corn!

Ok.  There you have it!  Steak dinner can be made in the crockpot and I, for one, am probably never going to make steaks on the grill ever again, unless we are having company and the whole grill thing is part of the atmosphere.

Oh - and I paid a descent amount for our steaks.  I paid about $25 (at Walmart) for a package of thick sirloin steaks.  However, by cubing the steaks and serving a couple of cubes for each person, that $25 has given us supper for the next few days.  We just reheated in the microwave and it worked great.  Plus it was WAY cheaper than eating steak in a restaurant!

Definitely I got lots of brownie points making steak dinner, delicious garlic bread, fresh corn on the cob, AND homemade ice cream for Sunday Dinner.

Let me know if you give it a try!

Here are some pics of this meal in action:

Enjoy!

Best Dill Pickles EVER! (Just like Claussen) (Easy - no canning!)

Do you want to make the best, easiest homemade dill pickles in the world?   I found a recipe for dill pickles that tastes JUST LIKE Claussen refrigerator pickles.  Those are the best anyway, right?  That crunch, the dill and the garlic... and oh yea , the crunch!  This recipe is super easy because you  don't have to process these pickles which means there is no canning needed.   You just fill a gallon jar (we use an old pickle jar) with fresh cucumbers and dill heads, and then pour over the cooled liquids/seasonings.   Let it sit on the counter for three days, and then refrigerate.  After that, the pickle eating begins. They are supposed to keep for one year like that in the fridge, without canning.  (We let them sit for the 3 days, then refrigerated them overnight before opening the jar for the much anticipated first taste. Did they taste like Claussen?  YOU BET YOUR PRETTY PICKLE THEY DID!  We were all SO ex...

Buttermilk Biscuits - Just like Cracker Barrel!

RECIPES AT THE TOP - CHIT CHAT AT THE BOTTOM! Here's how we make Buttermilk Biscuits AT HOME MY WAY: Buttermilk Biscuits (just like Cracker Barrel) (Makes about 8 biscuits.) PRINTABLE RECIPE HERE Ingredients: 2 cups SELF RISING flour  (self rising flour gives the perfect taste to homemade biscuits) 1/3 cup shortening  (cold real butter also works here) 1 1/4 cup buttermilk*  *NOTE:  (If using regular milk combined with lemon juice vinegar referenced below, you only need 1 cup of milk because thinner regular milk uses less by volume than the thick real buttermilk.) Directions: Preheat oven to 400 degrees. (Make sure your flour is "fluffed" not straight from the bag;  Dump it in a larger container and stir using up and down motion to fluff it up a little bit-THEN measure out 2 cups).  Measure 2 cups SELF RISING flour into a mixing bowl.  Add shortening and cut it until small and crumbly. A fork works fine for this purpose ...
