Potluck Success: Ooey Gooey Butter Cake

 


Ooey Gooey Butter Cake

  • 1 Yellow Cake Mix (standard box -dry mix only)
  • 3 Eggs (one for the crust; two for the cream cheese mix)
  • 8 oz block of Cream Cheese (softened)
  • 1/2 cup (1 stick) butter (the real thing), melted
  • 4 cups powdered sugar (+ a little extra powdered sugar for sprinkling after cooled)

Instructions:

PREHEAT OVEN to 300 degrees F. and spray a 9x13 dish well with cooking spray.

MIX cake mix, melted butter and ONE egg to a soft dough.

PRESS into the bottom of the sprayed 9x13 pan.

MIX powdered sugar, softened cream cheese and remaining TWO eggs until smooth (for about 1-2 minutes).  (I used the same bowl that I used for making the crust.)

POUR on top of unbaked crust.

BAKE at 300 ° for 40-50 minutes (until a toothpick comes out clean when inserted in the middle).

Potlucks are always tough for me.  I love to cook.  I mean, I really LOVE TO COOK but when I need to take something to a potluck where I have no idea what other folks are bringing or what is needed, I kind of freeze.  This was the case two weekends ago when we were invited to a friend's farm for a fish fry.  Mmmm fish!  That's really all I had on my brain but I knew I needed to take something to share.

I am blessed with full pantries and two full fridges and freezers so I knew I just needed to look around and see what I had that I could make without going to the store.  

  • I had a standard yellow cake mix.  I don't use them much but do buy them when they are super cheap.  Mine was Duncan Hines.  
  • I had cream cheese.  Aha!  An idea was coming to me.
  • I had real butter.
  • I had powdered sugar.
Gooey Butter Cake was it!

Ooey Gooey Butter Cake is a dessert is a regional favorite, local to St. Louis, Missouri.  The town where I live is directly between St. Louis and Kansas City so we end up enjoying all of the flavors of KC BBQ along with all the flavors of St. Louis (The Hill Italian fare AND Ooey Gooey Butter Cake). 

Ooey Gooey Butter Cake is a combo of delicious chewy blond brownie crust on bottom and cheesecake-ish, cream cheese on top.  It bakes up with a paper thin top like a perfect brownie.  It is rich so you want to cut the pieces like small brownies, but no one ever said you can't have more than one!  

Ooey Gooey Butter Cake has been a St. Louis tradition for over 80 years.  My recipe is a modern take on this regional favorite.  The original doesn't use a cake mix and I believe doesn't use cream cheese although has a similar ooey gooey factor.  If you see Ooey Gooey Butter Cake these days, it's generally made using a standard cake mix and cream cheese.  When people from my area see it at potlucks, they will generally say, "Oh!  Ooey Gooey Butter Cake!" or "Who made the Ooey Gooey Butter Cake?".

My dish was a hit at the fish fry.  It was a small crew due to rain and thankfully each one of us brought something different so there were no duplicates.  We enjoyed fish, fries, pasta salad, slaw, pepper jelly & cream cheese and for dessert- Ooey Gooey Butter Cake!  But most important, we enjoyed lots of chit-chat and that was the best part of all!

Doug, being the adventurous eater that he is (not) had never had Ooey Gooey Butter Cake.  He absolutely LOVED IT and enjoyed a few more pieces once we got home that evening.  I would expect we will be making this for his next office pot luck!

I divided the dough into 12 equal pieces to make it easier to press the crust evenly into the pan.

Baked at 300°F for 40-50 minutes or until a toothpick comes out clean when inserted in the middle.  Mine baked 45 minutes.


After cooking, sprinkle with powdered sugar.
Let it cool before cutting into squares.

RECIPES AT THE TOP - CHIT CHAT AT THE BOTTOM! Here's how we make Buttermilk Biscuits AT HOME MY WAY: Buttermilk Biscuits (just like Cracker Barrel) (Makes about 8 biscuits.) PRINTABLE RECIPE HERE Ingredients: 2 cups SELF RISING flour  (self rising flour gives the perfect taste to homemade biscuits) 1/3 cup shortening  (cold real butter also works here) 1 1/4 cup buttermilk*  *NOTE:  (If using regular milk combined with lemon juice vinegar referenced below, you only need 1 cup of milk because thinner regular milk uses less by volume than the thick real buttermilk.) Directions: Preheat oven to 400 degrees.
