Mom's Sugar Cookies

These are the sugar cookies my mom made most often.  We had them EVERY Christmas and just in general when we wanted cookies.  I love these.  They are easy!  They use simple ingredients that I most generally always have in my pantry.  They use oil instead of butter or margarine.  The dough doesn't have to be chilled and they are dropped with a spoon.  Couldn't be any easier!  They can be sprinkled with whatever colored sugar celebrates a certain holiday or birthday and they pretty much taste fantabulous!  They are puffy little crunchy yet moist cookies and I think they're perfect.

Here's how we make Mom's Sugar Cookies AT HOME MY WAY:

Mom's Sugar Cookies

  • 2 eggs, slightly beaten
  • 2/3 cup oil (I use canola or vegetable)
  • 2 teaspoons vanilla
  • 3/4 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 cups all purpose flour
  • Colored sugar for sprinkling
In a med mixing bowl, slightly beat the eggs.  Add in the sugar and oil.  Stir until well combined.  Add the vanilla.  Stir again.  Add the baking powder and salt.  Blend well.  Lastly, add the flour and stir well.

Drop onto sprayed or lightly oiled cookie sheet.  Using a sprayed/oil glass press the cookies down or I just usually flatten a little bit with my hands.  Don't flatten too thin.  Just flatten like fat little cookies.  Sprinkle with colored sugar.

Bake @ 350 Ā° for 12 minutes.  Cool, then remove to cooling racks.

Here's a closeup.  I was running out of red sugar and there is some stray green sugar here and there but you should taste them!  YUM!

  2. Amanda-Thanks so much for the nice comments. And I am so glad that these cookies went over so well for your family. I know every family has their favorite cookie and these are it for my family. I also make some other sugar cookie recipes, but when I'm looking to make something fast and cheap but very yummy, then these fit the bill! I'm also thrilled to know you have tried other recipes that I've posted on here. Sometimes I'm terrible about telling too much information instead of just giving the recipe but I've found more info is definitely never a bad thing LOL.

Let me know if you have success with something else. It always makes my day to know someone else likes the same stuff we do...

    Have a great day!

Best Dill Pickles EVER! (Just like Claussen) (Easy - no canning!)

Do you want to make the best, easiest homemade dill pickles in the world?   I found a recipe for dill pickles that tastes JUST LIKE Claussen refrigerator pickles.  Those are the best anyway, right?  That crunch, the dill and the garlic... and oh yea , the crunch!  This recipe is super easy because you  don't have to process these pickles which means there is no canning needed.   You just fill a gallon jar (we use an old pickle jar) with fresh cucumbers and dill heads, and then pour over the cooled liquids/seasonings.   Let it sit on the counter for three days, and then refrigerate.  After that, the pickle eating begins. They are supposed to keep for one year like that in the fridge, without canning.  (We let them sit for the 3 days, then refrigerated them overnight before opening the jar for the much anticipated first taste. Did they taste like Claussen?  YOU BET YOUR PRETTY PICKLE THEY DID!  We were all SO ex...

Buttermilk Biscuits - Just like Cracker Barrel!

RECIPES AT THE TOP - CHIT CHAT AT THE BOTTOM! Here's how we make Buttermilk Biscuits AT HOME MY WAY: Buttermilk Biscuits (just like Cracker Barrel) (Makes about 8 biscuits.) PRINTABLE RECIPE HERE Ingredients: 2 cups SELF RISING flour  (self rising flour gives the perfect taste to homemade biscuits) 1/3 cup shortening  (cold real butter also works here) 1 1/4 cup buttermilk*  *NOTE:  (If using regular milk combined with lemon juice vinegar referenced below, you only need 1 cup of milk because thinner regular milk uses less by volume than the thick real buttermilk.) Directions: Preheat oven to 400 degrees. (Make sure your flour is "fluffed" not straight from the bag;  Dump it in a larger container and stir using up and down motion to fluff it up a little bit-THEN measure out 2 cups).  Measure 2 cups SELF RISING flour into a mixing bowl.  Add shortening and cut it until small and crumbly. A fork works fine for this purpose ...
