Thankful Thursdays

This little blogging hobby that I started has really evolved into something wonderful.  I started following blogs mostly to get good housekeeping and recipe ideas.  But, boy did I find a whole new world of wonderful people!  Sometimes I feel like I'm the odd person in my world.  I think you could suffice it to say that most of the people I know don't cook from scratch.  They don't make stuff!  I'm sure even my own children think I'm a little bit "out there" for making some of the homemade stuff I make (like homemade sandwich bread, chocolate syrup, chocolate pudding, homemade pancakes, homemade cornbread, and even homemade glass cleaner). Like I say, I like doing things "At Home - My Way!"  But, the best thing about blogging so far has been that I have "met" some wonderful folks.  Folks just like me!  I love that I can read about someone who made a beautiful scratch birthday cake or even made homemade chocolate chips.  I love that stuff!  I was always the little kid trying to make sandals out of a paper bag and some yarn. Ha-ha.  But now, there's Pinterest!  Woah Nellie.  Hold me back LOL!  Apparently there's lots of people just like ME!


One of those wonderful people, Veronica, asked me to write a guest post on her blog, Veronica's Cornucopia.  Its a Thankful Thursday post.  I very much enjoyed writing this post.  My mom doesn't "do" computers.  So, I even printed this one out for her.  Sometimes you write something that really nails the way you feel.  And this one did!


Veronica's blog is wonderful.  The girl can flat out bake some serious cakes!  Plus she has all kinds of other recipes and they all look really, really yummy!  Her pictures are beautiful and I love to read everything she writes.  She's funny, warm, and speaks from the heart.

    I will watch for you on Pinterest. I love that site, but I can't seem to get an invite in order to get an account. I don't know if the email is coming to my spam or what. Did it take you a long time to get the invite? Love the ideas over there though!

Best Dill Pickles EVER! (Just like Claussen) (Easy - no canning!)

Do you want to make the best, easiest homemade dill pickles in the world?   I found a recipe for dill pickles that tastes JUST LIKE Claussen refrigerator pickles.  Those are the best anyway, right?  That crunch, the dill and the garlic... and oh yea , the crunch!  This recipe is super easy because you  don't have to process these pickles which means there is no canning needed.   You just fill a gallon jar (we use an old pickle jar) with fresh cucumbers and dill heads, and then pour over the cooled liquids/seasonings.   Let it sit on the counter for three days, and then refrigerate.  After that, the pickle eating begins. They are supposed to keep for one year like that in the fridge, without canning.  (We let them sit for the 3 days, then refrigerated them overnight before opening the jar for the much anticipated first taste. Buttermilk Biscuits - Just like Cracker Barrel!

RECIPES AT THE TOP - CHIT CHAT AT THE BOTTOM! Here's how we make Buttermilk Biscuits AT HOME MY WAY: Buttermilk Biscuits (just like Cracker Barrel) (Makes about 8 biscuits.) PRINTABLE RECIPE HERE Ingredients: 2 cups SELF RISING flour  (self rising flour gives the perfect taste to homemade biscuits) 1/3 cup shortening  (cold real butter also works here) 1 1/4 cup buttermilk*  *NOTE:  (If using regular milk combined with lemon juice vinegar referenced below, you only need 1 cup of milk because thinner regular milk uses less by volume than the thick real buttermilk.) Directions: Preheat oven to 400 degrees. (Make sure your flour is "fluffed" not straight from the bag;  Dump it in a larger container and stir using up and down motion to fluff it up a little bit-THEN measure out 2 cups).  Measure 2 cups SELF RISING flour into a mixing bowl.  Add shortening and cut it until small and crumbly.
