Pantry Cooking - Homemade Yellow Cake


I want to post this delicious little (snack size) Homemade Yellow Cake recipe.  This cake is really good!  Sometimes its hard to find a scratch yellow cake that tastes as good as a box cake.  But, with this recipe, who needs a box??  Not me!  I think this one is better!  It has that yummy aroma and taste of a grandma cake!

Last night I needed a little something sweet.  I didn't have any special ingredients on hand, just typical pantry stuff.  I decided to top this cake with a cinnamon crumb topping.  It turned out wonderful!  Even my husband loved it.  He's not much of a sweet eater, but he's been slicing off slivers since it came out of the oven.  This would work well for an afternoon snack or even a coffee cake to serve to friends or family.    

You could also make the cake as cupcakes (it would only make 12 cupcakes) and/or frost with your favorite frosting (and not use the crumb topping)!  My favorite frosting right now is this Easy Homemade Chocolate Frosting!  It would be terrific on this little cake.  This is a snack sized cake so bake it in a (sprayed) single round cake pan, pie pan, or 8x8 square baking pan.  Definitely this is a keeper recipe!  It's delish!

Here's how I made Pantry Cooking - Homemade Yellow Cake AT HOME MY WAY:


Homemade Yellow Cake (Snack Size)

  • 1/2 cup oil
  • 1 3/4 cup all purpose flour
  • 1 cup sugar
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 egg
  • 3/4 cup milk
  • 1 teaspoon vanilla.
Instructions:

Preheat oven to 350 degrees.

Combine all ingredients in a mixing bowl and using a mixer, combine, and then mix at med-high for two minutes.  Dump into prepared/sprayed 8 x 8 square/ 9-inch pie pan, or 12 cupcakes.


Bake at 350 degrees for 25 minutes (for cupcakes) to up to 35-40 minutes for a single cake.  It should be springy when it's ready to come out of the oven.


For the Cinnamon Crumb Topping:

In a small bowl combine:

  • 3 Tablespoons cold butter/margarine
  • 3 Tablespoons flour
  • 6 Tablespoons brown sugar
  • 1/2 teaspoon cinnamon
Instructions:

Combine all crumb topping ingredients and mash/blend with a fork until all combined.  

Sprinkle on unbaked cake, then bake as usual.

  2. Wow! this recipe was so easy. I had everything in my pantry. I wasn't sure if I wanted to add the cinnamon crumb topping but I did. : ) My house is smelling like a bakery. waiting for the cake to get done. Plan on sharing with friends and family... Thanks you for sharing.
